Hanka - Delicatessen Manager

General Managers

Our Managers are the reason Carluccio’s continues to thrive and grow.

Our Management training scheme – the Talent Development Programme – provides a solid foundation in our business, and will hone your management ability, giving you the confidence to be successful.

The Programme involves working hands-on in the business, with experienced Managers as your mentors who will share their skills and knowledge with you, and be there to help you throughout your training. This approach is then backed-up with off-the-job courses.

You will immerse yourself in the running of the restaurant by learning the standards in the kitchen, delicatessen, bar and restaurant departments, then moving on to how to run a successful shift,  legal requirements, how to deliver exceptional customer service, recruitment, training and coaching of team members and, finally, financial awareness.

Throughout your training you will be given regular feedback and tips to help  you perform even better.

Initial training lasts 8-12 weeks, but once you have successfully completed our Talent Development Programme  we will continue to help you evolve your career.

We are also committed to setting our Managers objectives and conducting performance reviews.

In addition, in any one month we run up to 50 off-the-job training courses, ranging from Management Skills development to Italian Food Master classes with our resident experts, to courses to keep you safe: such as First Aid, Food Hygiene, and Health and Safety.

Most of all, our training gives you a “crash course” on Italy: its food, its culture, its language. Ciao!

Assistant Managers


This important role involves assisting the General Manager in the successful running of the restaurant. You will be expected to take responsibility, and so it provides a valuable opportunity to learn about the whole business, as well as offering a useful launch pad for progress in your career.

 
Our Management training scheme – the Talent Development Programme – provides a solid foundation in our business, and will hone your management ability, giving you the confidence to be successful.

The Programme involves working hands-on in the business, with experienced Managers as your mentors who will share their skills and knowledge with you, and be there to help you throughout your training. This approach is then backed-up with off-the-job courses.

Delicatessen Managers

Our delicatessens are the showcase for the fresh, authentic, traditional Italian food which is the signature of Carluccio’s. They allow our customers to enjoy the pleasures of eating “Carluccio’s style” even when they are at home.

 

Our Delicatessen Manager training gives a solid foundation in running a busy delicatessen.

 

The training involves working hands-on in the business, with experienced Managers as your mentors who will share their skills and knowledge with you, and be there for you throughout your training.

 

The training will cover every aspect of working in a retail operation, as well as helping you discover Italian food. Once you have these essentials, you will be given training on how to recruit, train and develop the team, manage deliveries and stocks, and cost a rota. You will also be instructed in the important areas of hygiene and health and safety legislation.

 

Initial training lasts 4 weeks, but once you have successfully completed our Training Programme we will continue to help you evolve your career.

 

We are also committed to setting our Managers objectives and performance reviews.

 

In addition, in any one month, we run up to 50 off-the-job training courses, ranging from Management Skills development to Italian Food Master classes with our resident experts, to courses to keep you safe: such as First Aid, Food Hygiene, and to Health and Safety.

The Programme provides a solid foundation in our business. It gives you insight into how to develop your management skills, and builds the confidence you need for future success.

 

On our Talent Development Programme you will work hands-on in the business with experienced Managers as your mentors. They will share their skills and knowledge with you and be there to help you throughout your training. You’ll also take off-the-job courses to broaden your knowledge and understanding.

 

You’ll discover all there is to know about running a restaurant: by learning the standards in the kitchen, delicatessen, bar and restaurant. Head Chefs / Sous Chefs

Our food is freshly prepared every day by our chefs, using only the most authentic and freshest ingredients, carefully sourced. As Head or Sous Chef you would need to oversee these preparations as well as taking responsibility for ordering and stock control. So you will require great cooking skills (or great potential), and a firm commitment to consistency of production.

 

In return, Carluccio’s will offer you genuine opportunities to progress.

We recognise that it is our chefs who help us keep this commitment to fresh and authentic food, which is why we realise the importance of developing, training and investing in them.

 

The training we provide gives our chefs a solid foundation in running a kitchen to consistently achieve our high food standards. At the end of chef training, you will have the confidence and knowledge to be successful within a busy kitchen.

 

The training involves working hands-on in the business, with experienced Chefs as your mentors who will share their skills and knowledge with you, and be there for you throughout your training.

 

The training will cover working in each section of the kitchen. As our food is made fresh daily, how to make it to a consistent standard  is  a highly important part of the training. Once this has been mastered, you will be given training on how to recruit, train and develop the team, how to manage deliveries and stocks, and how to cost a rota. You will also be instructed in the important areas of hygiene and health and safety legislation.

 

Initial training lasts 4 weeks, but once you have successfully completed our Training Programme we will continue to help you evolve your career.

 

We are also committed to setting our Chefs objectives and conducting performance reviews.

 

We offer a wide range of training and development courses, from weekly sessions in our training kitchen to an 11-week course for experienced Commis Chefs & Sous Chefs, run in conjunction with Westminster Kingsway College in London. We also run a 3 (2 weeks)-week course for our Head Chefs in Italy.

 

In addition, in any one month we run up to 50 off-the-job training courses, ranging from Management Skills development to Italian Food Masterclasses with our resident experts, to courses to keep you safe: such as First Aid, Food Hygiene, and Health and Safety.

After you initial training period of a week you will be able to:


  • Prepare and serve coffee, soft drinks and wine


  • Deal with high volume of drink orders and work speedily


  • Handle pressure positively


  • Ensure standards of personal and food hygiene are met


  • Ensure consistency of drinks production


  • Ensure the bar area is kept clean and tidy


  • Accept deliveries and stock control


  • Set up and close the bar areas


 

Chefs

After you initial training period you will be able to:


  • Prepare, and cook with fresh food


  • Deal with high volume of food tickets and work speedily


  • Handle pressure positively


  • Ensure standards of personal and food hygiene are met


  • Ensure your section is kept clean and tidy


  • Ensure consistency of food production


  • Accept deliveries and stock control


  • Set up and close the kitchen and food preparation areas

 

Delicatessen Sales Assistants

After you initial training period of a week you will be able to:


  • Deliver fantastic levels of customer service


  • Adapt your service to the different types of customers who visit our delicatessens


  • Deal with high volumes of customers


  • Prepare and service of fresh and packaged food


  • Ensure standards of personal and food hygiene are met


  • Ensure the delicatessen is kept clean and tidy


  • Accept deliveries and stock control


  • Set up and close the delicatessen


 

Waiting

After you initial training period of a week you will be able to:

 

  • Deliver fantastic levels of customer service
  • Adapt your service to the different types of customers who visit our restaurants
  • Deal with high volumes of customer
  • Handle a section effectively and speedily
  • Ensure the restaurant is kept clean and tidy
