Gianduja chocolates originated in Turin in the 19th century where confectioners found a way of making the chocolate go further by grinding the local hazelnuts into a paste and combining it with chocolate. The high hazelnut content meant that the chocolate would not set in moulds. For this reason the chocolate had to be extruded through a nozzle to form its characteristic shape.
