Le Salse

Created mostly for pasta, sauces are representative of their region. Mushroom and meat based from the north, tomato and slow cooked ragus from the south, hot chilli and fish from the deep south and the islands. Our sauces should be used sparingly as they carry a good intensity of taste. A good tip is to use a couple of spoons of the pasta cooking water to thin the sauce.
