2013 Vin Santo DOC, Fattoria dei Barbi , 37.5cl
From Tuscany, this golden dessert wine is intensely aromatic with hints of raisins and nuts. Traditionally served at the end of a meal with Cantucci biscuits for dipping.
The grapes are collected from mid September and are then set to dry on special mats called “graticci”. Between December and January the juice in the grapes is reduced to a very sugary syrup. At this stage, the grapes are gently pressed and the liquid must is sealed together with the “Madre” – Mother yeasts that are produced over decades and kept alive, and kept in oak barrels for at least three years. The wine is then separated from the Madre and aged for a final 2-3 years in oak barrels before bottling.
