Easter has arrived! The traditional Italian Easter cake, the smaller one!
In the 30s, a bakery in Milan thought of a way of offering Panettone to their customers all year round, or at least at another time of the year. They used the same dough, buttery and yeasty with candied orange peel, added almonds on the icing and made a dove shaped cake, a Colomba. It became and an instant success and it is now the truly national Easter cake, eaten all over Italy.
