1 loaf of Toscano or ciabatta bread, thickly sliced
1 large clove of garlic, skinned and halved
3 large ripe beef tomatoes, diced
2-3 spring onions, finely sliced
1 roasted yellow pepper, diced
3-4 sprigs of fresh basil leaves, roughly torn
A pinch of dried oregano
Salt and freshly ground black pepper
Brush both sides of the bread slices with the extra virgin olive oil, place under a pre-heated grill and toast lightly on each side without burning. Remove from the grill and rub the cut side of the garlic clove over the toasted bread.
Then crush the garlic and mix with the tomatoes, spring onions, pepper, basil and oregano and add salt and pepper to taste.
Arrange the toasted bread slices on a plate and top with the tomato mixture. Drizzle with some additional extra virgin olive oil and serve immediately.
