Working Towards A More Sustainable Future

Launched in 2010, Carluccio’s was a founding member of the Sustainable Restaurant Association (the SRA). By making changes to the way we behave as a business, we aim to improve both the social and environmental impact of our operations. And the hard work to continues to keep driving this forward.

Sourcing with Integrity

At Carluccio’s we only work with trusted suppliers to ensure our products meets the highest safety and quality standards. This is fundamental – not only to our ability to reassure our guests as to where our food and drink comes from, but also to protecting our business with a secure, sustainable supply chain. We have developed a Food & Packaging Sourcing Policy that we expect all suppliers to adhere to, some of the highlights from this include:

  • All suppliers certified to a recognised GFSI food safety standard
  • We only use fish that is rated 1-3 by the Marine Conservation Society
  • Artificial ingredients such as sweeteners, colours, flavour enhancers and trans fats are not permitted in our food and we regularly reformulate recipes to exclude such ingredients
  • Where palm oil is used it is sustainably sourced to a minimum of RSPO or Green Palm Standard
  • Our coffee, tea, sugar and hot chocolate is Fairtrade or Rain Forest Alliance certified as a minimum
  • Food products supplied to Carluccio’s are required to adhere to the 2017 Salt Targets and 2020 Sugar Targets as published by Public Health England
  • Suppliers are required to support Carluccio’s in its commitment to reduce the use of single use plastics

We continue to challenge our suppliers to ensure we are always making progress and some of our future commitments include:

  • Only sourcing food ingredients that are LEAF certified by 2021
  • Eliminate all single use plastics by 2025

Contributing to Society

Carluccio’s has collaborated with the charity Action Against Hunger since 2007 to raise money through every dish of Penne Giardinera served in our restaurants. So far, we have raised an amazing £2million to support their projects in Africa. Action Against Hunger are a dedicated and hardworking humanitarian charity committed to saving the lives of malnourished children and providing families with access to safe water and good nutrition in the poorest countries across the globe.

The Environment & Waste Management

Carluccio’s values natural resources and recognises the impact that its operations can have on the environment in terms of waste generation

  • We recycle glass, plastic (PET & HDPE), paper, cardboard, metal and office waste and consistently divert 92% of waste from landfill
  • Approximately 50% of the energy we use comes from renewable sources
  • Our staff receive environmental training, including guidance on energy and water efficiency and the fundamentals of sustainability
  • Our used cooking oil is collected and recycled into bio diesel
  • We have installed equipment and technology to help monitor and reduce our energy consumption including smart meters, LED lighting and low flush toilets
  • We use environmentally friendly cleaning products to clean our kitchens
  • All of our office paper, menus, kitchen paper towels and toilet paper are made from recycled sources or FSC certified paper
  • We have removed plastic straws from our restaurants and replaced with paper straws given out at the request of the customer only. This took over 1.2 million straws per year out of circulation
  • We have introduced a 25p per coffee discount for customers bringing in their own reusable cups
  • Returnable trays have been introduced  to transport fresh produce to our restaurants reducing the amount of waste cardboard used by 23 tonnes over an 8 month period

To continue our work in this area we will be focusing on our takeaway packaging in the next 12 months and switching to more sustainable options. We also pledge to eliminate any unnecessary single-use plastics by 2025 in line with asking our suppliers to do the same
