A very traditional ragu made from mixed wild meats in a tomato based sauce. This is seriously comforting and gutsy food.
'Cacciatora' means hunter and this title reflects the mixture of wild meats (wild boar, venison & hare). The meats are slow cooked with tomatoes, wine and a little dark chocolate — all combining to make this delicious, deep and complex tasting sauce.
Don't be shy - this is real Italian food and something you simply must try and we've saved you 2-3 hours of long slow cooking here.
Traditionally pairs with Buccatini but you can try with any of pasta of your choice.
