Tomato Salad Recipe

Serves: 2-4 Prep time: 10 minutes

Ingredients:

  • 1 cup (approx. 150g) mixed cherry tomatoes (red and yellow), halved

  • 2-3 medium ripe beef tomatoes, cut into wedges or chunky pieces

  • A generous handful of fresh basil leaves, roughly torn or left whole if small

  • A small handful of fresh pea shoots (or substitute with a few rocket leaves or microgreens)

  • 1-2 small cloves of garlic, very finely minced

  • 3-4 tablespoons Carluccio's Extra Virgin Olive Oil

  • Sea salt, to taste

  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Tomatoes: In a large mixing bowl, combine the halved cherry tomatoes and the cut beef tomato pieces.

  2. Add Aromatics & Herbs: Sprinkle the finely minced garlic over the tomatoes. Add the torn fresh basil leaves and the pea shoots.
