Here are three incredibly easy recipes using products from our "A Passion for Mushrooms" collection, which you can find in our online shop.
1. The Weeknight Luxury: Quick Truffle Pasta
This recipe uses our White Truffle Oil to create an elegant, simple pasta dish in minutes. The key is adding the oil after the heat is off to preserve its delicate aroma.
What You Need:
-
2 tbsp Extra Virgin Olive Oil
-
1 clove Garlic, minced
-
1 tbsp fresh Parsley, chopped
-
1-2 tsp of Carluccio's White Truffle Oil (to taste)
-
Grated Parmigiano Reggiano, for serving
-
Salt and Black Pepper
Method:
-
Cook the pasta according to package directions until al dente. Reserve about 100ml of the pasta cooking water.
-
While the pasta cooks, heat the 2 tbsp of Extra Virgin Olive Oil in a large pan over medium heat. Add the minced garlic and cook gently for about 30 seconds (do not let it brown).
-
Drain the pasta and add it directly to the pan with the garlic oil. Toss to coat. Add a splash of the reserved pasta water to create a light, emulsified sauce.
-
Remove the pan from the heat. Stir in the chopped parsley and the White Truffle Oil. Toss one last time.
-
Serve immediately with a generous grating of Parmigiano Reggiano.
2. The Speedy Side Dish: Creamy Truffle Mash
This side dish is rich, velvety, and pairs beautifully with simple grilled meats or chicken. We use our Truffle Cream here for a deeply embedded flavour.
What You Need:
-
1 kg of potatoes (e.g., Maris Piper or Russet), peeled and cubed
-
50g unsalted butter
-
100ml warm milk
-
1 tbsp of Carluccio's Truffle Cream
-
Salt and Pepper
Method:
-
Boil the potatoes in salted water until very tender. Drain them thoroughly and return them to the hot pot.
-
Add the butter and warm milk. Mash the potatoes until smooth and lump-free.
-
Stir in the generous tablespoon of Truffle Cream. Mix quickly until the cream is fully incorporated.
-
Taste and adjust seasoning with salt and pepper. The Truffle Cream delivers all the flavour needed, so keep the seasoning simple.
3. The Gourmet Appetiser: Truffle Honey and Pecorino Bruschetta
Our Acacia Honey with Truffle provides a sensational sweet and savoury contrast, perfect for an Italian-style appetiser.
What You Need:
-
4 slices of rustic Italian bread (like sourdough or ciabatta)
-
Extra Virgin Olive Oil, for drizzling
-
100g Pecorino cheese (or mature Parmesan), shaved thinly
-
2 tsp of Carluccio's Acacia Honey with Truffle
Method:
-
Toast the bread slices until golden and crisp.
-
While the toast is still warm, lightly drizzle the surface of each slice with a little Extra Virgin Olive Oil.
-
Place the thin shavings of Pecorino cheese generously over the bread. The warmth of the toast will slightly soften the cheese.
-
Finish by drizzling half a teaspoon of the Acacia Honey with Truffle over the cheese on each slice. The sweet honey and aromatic truffle combination with the salty Pecorino is a delight.
