The Recipe: Emilian Carpaccio

Whether you choose a classic, beautifully seared beef fillet or a vibrant vegetarian alternative of roasted beetroot, the key to this dish lies in the minimalism of its assembly and the premium quality of its finishes.
Ingredients

200g beef fillet (seared briefly on the outside and chilled) OR 2 medium beetroots (roasted until tender and cooled)

A handful of fresh wild rocket
- A few capers (optional)

Parmigiano Reggiano, shaved into delicate shards

Carluccio's Extra Virgin Olive Oil (for a light, fruity base)

The Base: Using a very sharp knife, slice your seared beef fillet or roasted beetroot into paper-thin rounds. Arrange the slices across a large platter, overlapping them slightly to create a beautiful canvas.

The Greens & Cheese: Scatter a handful of peppery wild rocket across the centre of the platter. Top generously with the shaved shards of Parmigiano Reggiano.

The First Pour: Season the platter minimally with a pinch of sea salt and a crack of black pepper. Drizzle very lightly with our premium Italian extra virgin olive oil to coat the rocket and coat the base.
