Elevate Your Brunch: Eggs Diavolo with Spicy 'Nduja
Breakfast in Italy is often a simple affair, but the weekend brunch calls for something with a bit more fire. Enter Eggs Diavolo—a devilishly delicious dish that transforms the humble fried egg into a gourmet experience using one of our most iconic pantry staples.
The secret to this recipe is Carluccio's own 'Nduja Spicy Salami Spread. This fiery, spreadable pork salame from Calabria is packed with chilli and deep, smoky flavour. When heated, it releases a vibrant, piquant oil that acts as the perfect frying medium for eggs, infusing them with a heat that wakes up the palate.
The Power of the Pantry
In keeping with the Carluccio’s philosophy of "minimum of fuss, maximum of flavour," this dish relies on just a few high-quality ingredients. By using the 'Nduja as both the cooking fat and the seasoning, you create a complex, chef-standard brunch with very little effort.
Ingredients (Serves 2)
-
2 large free-range eggs
-
2 heaped tablespoons 'Nduja Spicy Salami Spread
-
2 thick slices of crusty bread (or try our Ciappe Liguri for a lighter, crispier base)
- 1 clove of garlic, halved
-
Fresh parsley or chives, finely chopped (optional)
Method
1. Prepare the Bruschetta
Lightly toast your bread slices until golden. While still warm, rub with the garlic and drizzle them with a little Extra Virgin Olive Oil.
2. Release the 'Nduja Oil
Place a non-stick frying pan over a medium-low heat. Add the 'Nduja to the dry pan. As it warms, use a wooden spoon to break it up. You will see the 'Nduja begin to melt and release its signature bright red, spicy oil.
3. Fry the Eggs
Once the 'Nduja is sizzling and the oil has coated the bottom of the pan, carefully crack your eggs directly into the spicy oil. Use a spoon to baste the egg whites with the hot red oil, ensuring the edges get nice and crispy while the yolk remains perfectly runny.
4. Assemble
Carefully lift each egg—along with the crispy bits of 'Nduja—and place them onto your prepared bruschetta. The spicy oil will soak into the bread, marrying all the flavours together.
How to Serve
Finish with a scatter of fresh herbs and an extra crack of black pepper. The result is a bold, "swicy" (sweet and spicy) breakfast that feels like a trip to the south of Italy.
This is brunch, redefined. No complicated hollandaise or hours spent at the stove—just the best of the Italian deli, served hot.
