Maximum Flavour, Minimum Fuss: Whipped Ricotta & Bruschetta Ligure Dip
The "whipped cheese" trend has taken the online food world by storm, and for good reason. It is the ultimate modern expression of the Carluccio’s philosophy: it looks impressive, tastes incredibly sophisticated, yet requires almost very little fuss.
By aerating fresh ricotta, you transform a simple dairy staple into a luxurious, cloud-like canvas for the bold, regional flavours of Liguria. Featuring our authentic Bruschetta Ligure and Battuto di Olive, this dip is the perfect centrepiece for your next gathering.
Ingredients

For the Base: 500g fresh Ricotta cheese, 1 tbsp Ligurian Extra Virgin Olive Oil, and a pinch of sea salt.

The Toppings: 3 tbsp Bruschetta Ligure (Tomato, Pepper, and Olive spread) and 2 tbsp Battuto di Olive (Taggiasca Olive Tapenade).

For Serving: Focaccina Breadsticks and/or a packet of Ciappe Liguri flatbreads.

The Finish: A final drizzle of Ligurian Extra Virgin Olive Oil.
Method
1. Whip the Ricotta
Place the fresh ricotta in a food processor or a large mixing bowl. Add one tablespoon of olive oil and a small pinch of salt. Whip on high speed (or use a whisk and some elbow grease) for about 2–3 minutes until the cheese loses its grainy texture and becomes light, airy, and smooth as silk.
2. Create the "Wells"
Spread the whipped ricotta onto a wide, shallow platter. Use the back of a large spoon to create a few deep swirls or "wells" in the surface of the cheese. These little valleys are essential for holding the oils and spreads we are about to add.
3. Layer the Ligurian Flavours
In one well, spoon the Bruschetta Ligure, letting the vibrant red of the tomatoes and peppers stand out against the white cheese. In another, add the Battuto di Olive. The dark, savoury Taggiasca tapenade provides a beautiful salty contrast to the creamy base.
4. The Final Flourish
Drizzle a little more Ligurian Extra Virgin Olive Oil over the entire platter. The oil will pool in the ridges of the ricotta, adding a peppery finish and a beautiful golden glisten.
How to Serve
Place the platter in the centre of the table and surround it with breadsticks and Ciappe Liguri. The handmade focaccia sticks offer a sturdy, salty crunch, while the thin ciappe are perfect for scooping up generous amounts of the airy ricotta and tapenade.
