Bringing It Together: Warm Polpo & Potato Salad with Anchovy Dressing

Ingredients:

1 medium fresh or defrosted octopus (approx. 800g–1kg), cleaned

400g waxy baby potatoes, washed

4 tbsp premium Extra Virgin Olive Oil

3 quality oil-packed anchovy fillets

1 garlic clove, lightly bruised

Juice and finely grated zest of 1 unwaxed lemon

Small handful of fresh flat-leaf parsley, coarsely chopped

15g block of Bottarga (for finishing)
Method:

Prepare the Octopus: Place the cleaned octopus in a deep pot over medium-low heat with no added water or salt. Cover tightly; the octopus will cook in its own juices. Simmer gently for 35–45 minutes until a knife pierces the thickest part of a tentacle effortlessly. Turn off the heat and allow it to cool in its cooking liquid for 15 minutes before slicing into bite-sized pieces.

Boil the Potatoes: Simultaneously, boil the baby potatoes in salted water until tender (around 15 minutes). Drain, slice into halves, and transfer to a large serving bowl.

Make the Anchovy Dressing: In a small saucepan over gentle heat, combine the extra virgin olive oil, bruised garlic clove, and anchovy fillets. Stir with a wooden spoon for 2–3 minutes until the anchovies melt completely into the warm oil. Remove from heat, discard the garlic, and whisk in the fresh lemon juice.

Assemble & Finish: Add the sliced warm octopus to the potatoes. Pour the warm anchovy-infused dressing over top and toss gently with the chopped parsley and lemon zest.
