Pasta al Tonno: The Quintessential Italian Pantry Feast
Few dishes capture the spirit of Italian home cooking quite like Pasta al Tonno. When time is short, but expectations for deliciousness remain high, Italian kitchens turn to this quick, utterly satisfying dish. It is a midweek saviour that tastes like a weekend luxury, proving that you don't need dozens of ingredients to create culinary magic.
The Provenance of Pasta al Tonno
The story of Pasta al Tonno is rooted in Italy’s long relationship with preserved fish, particularly along the sun-drenched coastlines of Sicily, Calabria, and Campania. Historically, fresh tuna from the annual matanza (traditional tuna harvest) was preserved in abundant local olive oil—creating tonno sott'olio—to sustain families throughout the year.
Over generations, canned high-quality tuna packed in olive oil became an absolute staple in every Italian storecupboard. Paired with sweet tomatoes, garlic, and robust pasta, this humble storecupboard hero evolved into an icon of Italian comfort food.
It embodies the founding philosophy of Antonio Carluccio: "Minimum of Fuss, Maximum of Flavour." Because the ingredients are so few, the success of the dish relies entirely on using fine artisanal ingredients—from bronze-die extruded pasta that catches every drop of sauce, to cold-pressed olive oils that bring warmth and fruitiness to the pan.

Ingredients
-
400g Quality Italian Long Pasta: Spaghetti or Bucatini from the Carluccio's pasta collection.
-
2 tins (approx. 160g each) High-Quality Tuna in Olive Oil: Drained slightly, but retaining some oil.
-
1 tin (400g) Quality Italian Tinned Tomatoes
-
2 cloves of Garlic: Lightly bruised or finely sliced.
-
3 tbsp Carluccio's Extra Virgin Olive Oil: For gentle pan-frying.
-
1–2 tsp Carluccio's Chilli Oil: To add a warm, fiery kick to taste.
-
1 tbsp Capers: Drained and rinsed (optional, for extra tang).
-
Fresh Flat-Leaf Parsley: Finely chopped.
-
Sea Salt and Freshly Ground Black Pepper: To taste.
Method
1. Build the Base
Warm the Carluccio's Extra Virgin Olive Oil in a large frying pan over medium heat. Add the sliced garlic and gently cook for 1 to 2 minutes until fragrant and lightly golden, being careful not to let it burn.
2. Simmer the Tomatoes
Pour in the chopped tomatoes and capers (if using). Season lightly with sea salt and black pepper, then let the sauce simmer gently for about 8 to 10 minutes until it thickens slightly and the flavours meld together.
3. Flake the Tuna
Flake the tuna into generous chunks into the simmering tomato sauce. Stir gently so the tuna stays in satisfying bites rather than dissolving completely. Let it warm through for 2 to 3 minutes.
4. Cook the Pasta
Meanwhile, bring a large pan of generously salted water to a rolling boil. Drop in your pasta from our bronze-die range and cook until al dente (usually 1 to 2 minutes less than the packet instructions).
5. Toss Together
Using tongs, transfer the cooked pasta directly into the frying pan with the sauce, allowing a splash of starchy pasta water to mix in. Toss continuously over medium heat for 1 minute until the sauce clings perfectly to every strand.
6. The Finishing Touch
Remove from the heat and stir through a generous handful of chopped parsley. Divide among warm bowls and drizzle each serving with Carluccio's Chilli Oil for an invigorating burst of spicy heat.
