Torrone, or nougat, as it's known in the UK, is cooked for no more than two hours. This shorter cooking time preserves a higher moisture content in the mixture. Combined with a distinct recipe, it results in a firmer dough.
At this stage, nuts and candied peel are added and thoroughly mixed until evenly distributed throughout. The dough is then cooled and hand-rolled into a Tronchetto, a log shape, making each piece unique.
