Sardine in Carpione

Roasted sardines marinated in a sauce of red onion, carrots, pinenuts, raisins and bay leaves. This typical Sicilian recipe has echoes of its Arabic origins.

Swordfish Muddica

Swordfish served the traditional Sicilian way, coated in herbed breadcrumbs, parmesan and grilled. Served with a salad of courgette, green beans, rocket and parmesan shavings.
