Spaghetti Aglio e Olio
Ingredients

400g spaghetti

4-6 cloves of garlic, thinly sliced

1-2 dried red chillies, finely chopped

A handful of fresh parsley, chopped

Salt for the pasta water
Instructions

Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the packet instructions until it is al dente.

While the pasta is cooking, prepare the sauce. In a separate pan, gently heat the Carluccio's Extra Virgin Olive Oil over a low heat. Be careful not to let the oil smoke.

Add the thinly sliced garlic and chopped red chilli to the oil. Cook gently for a few minutes, stirring occasionally. The key here is to infuse the oil with the flavors without browning the garlic. It should become fragrant and slightly golden.

Once the spaghetti is cooked, reserve a mugful of the starchy pasta water. Drain the spaghetti and add it directly to the pan with the garlic and oil.

Increase the heat and toss everything together, ensuring the pasta is well coated in the flavored oil.

Add a splash of the reserved pasta water to create a light, emulsified sauce that clings to the spaghetti. Toss vigorously for a minute.

Remove from the heat, stir in the fresh chopped parsley, and serve immediately.
