A delicious pesto variant combining sun dried tomatoes with the DOP basil from Liguria, Parmigiano Reggiano and cashew nuts for a creamy texture.
Use at room temperature and stir though warm or cold pasta. Superb as a pasta dish, with pasta trofie, or use as topping for crostini and bruschetta.
Serving suggestion: Try on Carluccio's Ciappe (or other breads) — generously spoon on our Pesto Rosso, lay a full upturned basil leaf on top and finish with Bocconcini (bite size Mozzarella di Bufala pearls).
Red pesto can add a supreme depth of flavour to many different sauces.
