Pesto Calabrese – Red Pesto Sauce
A classic Calabrian pesto made from combining sheep’s milk Pecorino cheese & soft Ricotta with local sun dried tomatoes and creamy almonds.
This is a pesto that works wonderfully with shorter pastas, such as Trofie or Orecchiette. Add a little pasta water to the sauce and combine.
Or spread generously as a topping for bruschetta & crostini canapes.
