May Bank Holiday Meals: Italian Style, Effortless Flavour

Whatever The Weather, These Italian Feasts Will Bring Sunshine To Your Table

The May Bank Holiday arrives like a burst of Mediterranean sunshine, giving us that extra day to slow down, fire up the grill, or simply enjoy a long, leisurely lunch with family and friends. While the weather may be unpredictable here in the UK, your menu doesn't have to be!

At Carluccio's, we believe the best Bank Holiday food is relaxed, requires minimal kitchen time, and delivers maximum flavour—all attributes that lie at the heart of authentic Italian cuisine.

Here are three simple, beautiful Italian twists to elevate your long weekend meals, whether you're planning a picnic, a garden party, or a classic Sunday roast alternative.

1. The Picnic Hero: The Ultimate Italian Sandwich (Panino)

Forget soggy fillings and basic bread. The Italian panino (sandwich) is built to travel and only improves as the flavours meld. It is the perfect anchor for any Bank Holiday picnic or packed lunch.

  • The Carluccio's Twist: Start with a fantastic loaf, like a rustic focaccia or a crisp ciabatta. Slice it horizontally and hollowing out a little of the interior bread to make room for fillings without the squash.

  • The Filling Strategy: This is about layering salty, creamy, and zesty notes.

    • The Base: Spread a generous layer of Carluccio's Pesto Rosso  or a simple basil pesto.

    • The Meats: Layer thin slices of Prosciutto Crudo, salty Salame Milano, and perhaps some spicy ’Nduja spread sparingly.

    • The Cheese: Add thin slices of firm Provolone or fresh, creamy Mozzarella (drained well!).

    • The Crunch: Finish with marinated artichoke hearts and a few leaves of peppery rocket.

Wrap it tightly in parchment paper and chill. Slicing it into neat, party-friendly portions just before serving makes it easy to share.

2. The Simple BBQ Starter: Grilled Peaches & Burrata

An Italian barbecue (grigliata) isn't just about meat; it's about sensational antipasti that use fresh, seasonal ingredients. This dish takes minutes to prepare and looks effortlessly sophisticated.

  • The Ingredients: You only need four components: ripe peaches, a ball of creamy Burrata, a drizzle of high-quality balsamic vinegar, and a scattering of fresh basil.

  • The Method: Halve the peaches and remove the stone. Brush the cut sides lightly with olive oil and place them cut-side down on the hot grill or griddle pan for 2–3 minutes until they have light char marks and are slightly softened.

  • The Assembly: On a platter, place the warm grilled peaches. Tear the Burrata open, letting the creamy interior ooze onto the plate. Drizzle generously with an aged Balsamic Vinegar and finish with fresh basil leaves. The warm, smoky sweetness of the peaches against the cool, salty creaminess of the Burrata is simply divine.

3. The Easy Feast: Tagliata di Manzo

When you want a centrepiece without the fuss of a traditional roast, Tagliata is the answer. Translating literally to "sliced," this dish is an elegant steak dinner that focuses on the quality of the cut and a vibrant, fresh dressing.

  • The Meat: Use a thick cut of sirloin, rib-eye, or a flat iron steak. Season generously with only salt and pepper.

  • The Cooking: Grill or pan-fry the steak until a beautiful crust forms and it is cooked to your liking (usually medium-rare is best for tagliata). Rest the steak well. This is crucial!

  • The Presentation: Slice the steak thinly across the grain. Arrange the slices on a bed of fresh rocket leaves.

  • The Finish: Drizzle the entire platter with a dressing made simply of good Extra Virgin Olive Oil and fresh lemon juice. Top with shavings of salty Parmigiano Reggiano and a grinding of black pepper.

This plate is a celebration of texture and contrast: warm, tender steak, cool, peppery rocket, and salty, rich cheese—a truly relaxed Italian feast for the long weekend.
